| Aire del Sur originates in its greater majority from the Picual variety, which is characterized by its high content of Vitamin E, oleic acid and polyphenols, important natural antioxidants which give the oil a great stability and resistance to oxidization due to the great strengths given by the refinements of flavour and aroma. The second variety is the Arbequina which contributes to the smoothness of flavour and the fresh and fruity aroma. The third and last variety is the Picudo which gives it a sweet and exotic fruit flavour, as well as those of apple and almond. |
