| In the area in which we live, olive farming isn’t a monoculture; its contribution in the total agricultural area is less than 10%. This means that incidence of pests and disease is much less and therefore the need for any kind of treatment is minimal. The farms are at an altitude of over 800 metres, with very extreme temperatures (winters are cold, whilst the summers are dry and hot), growing on poor soils and with a regime of scarce rainfall, which contributes to the oil’s very special scent and flavour characteristics. |
